The estate

Rooted in the Loire region, Domaine Denizot is a family estate whose winemaking history dates back to the 17th century. Today, Jennifer and Thibauld Denizot, representing the sixth generation, are at the helm of the property. The vineyard spans around twenty hectares split between Sancerre and Pouilly-Fumé. Committed to an environmentally friendly approach through its conversion to organic farming, the estate stands out for its rigorous parcel-by-parcel approach and its determination to produce wines that faithfully reflect the richness of their limestone terroirs.

The vineyard

This cuvée comes from the specific plot known as La Belle Oreille, located in the commune of Verdigny, at the heart of the Sancerre appellation. This distinctive terroir is built on clay-limestone soils that give the wine its structure. The vines are old, trained using the braided method (taille en tresse), a rare technique requiring meticulous know-how. The vineyard is cultivated using thoughtful methods, without herbicides or insecticides, favouring mechanical soil work through hoeing and ploughing, as part of an organic conversion with biodynamic leanings.

Winemaking and aging

The grapes are harvested entirely by hand to preserve the integrity of the berries. In the cellar, they are handled gently. The philosophy behind the Absolue Rouge 2023 cuvée is rooted in minimal-intervention winemaking that stays true to its origin. The must generally ferments with indigenous yeasts following a cold maceration. Aging takes place in oak, allowing the wine's texture to be refined. Finally, bottling takes place at the estate, with no prior filtration, to preserve the full complexity of the wine.

Food and wine pairings

This Sancerre red, with its structure and complexity, pairs beautifully with full-bodied meats. It will go wonderfully with game dishes such as venison, but will also enhance more delicate fare like veal or roast poultry.

Serving and cellaring

To fully appreciate the nuances of this wine, it is best served at a temperature of between 16 and 17°C. With excellent aging potential, this structured red wine can be cellared and enjoyed until at least 2031.
