The roughly 13-hectare vineyard stands out for its historic walled plot and modern facilities, including a unique gravity-flow winery. Certified organic and biodynamic, the estate crafts highly precise wines that faithfully reflect the richness of their terroirs.

The Vineyard

This Burgundy wine comes from a selection of old vines cultivated with great care. The vineyard is farmed according to organic and biodynamic principles, fostering deep respect for the soil and biodiversity. The harvest is carried out entirely by hand, allowing for meticulous grape selection right from the vine, followed by sorting on a table.

Winemaking and Aging

The estate's philosophy favors minimal intervention in crafting the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2021. After rigorous sorting, the grapes undergo gentle pressing.
