Tasting
Nose
The aromatic bouquet, true to the style of this cuvée, reveals a beautiful complexity blending citrus notes such as lemon zest, white fruit like peach, and delicate touches of white flowers. Herbaceous nuances of sage and lemongrass intertwine with a strongly marked mineral backbone.
Palate
The attack reveals a racy acidity and a saline minerality that perfectly balance a rich, creamy texture. The palate unfolds citrus and white fruit flavours, enhanced by a subtle hint of vanilla. The long, persistent finish is distinguished by an elegant stony bitterness.
Food and Wine Pairing
This white wine pairs beautifully with seafood such as pan-seared scallops, sea bream tartare, or noble fish like turbot. It also goes very well with poultry in a light sauce, lemon chicken, as well as aged goat's cheese or soft cow's milk cheeses.
Serving and Cellaring
Boasting remarkable ageing potential for its appellation, the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2024 can be cellared to develop further for a decade, and will be ready to drink until around 2034.
The pure, mineral expression of a great white Burgundy
The Estate
Founded between 1120 and 1130 by Cistercian monks, Domaine du Cellier aux Moines is a historic gem located in Givry, in Burgundy. Left forgotten for years, it was revived in 2004 under the impetus of its current owners, Philippe and Catherine Pascal. Today, the estate spans approximately 13 hectares and stands out for its exacting approach summed up by the motto "Simplex Natura". A pioneer in its region, the estate combines a rich monastic heritage with cutting-edge viticulture, producing wines of great precision that faithfully reflect their terroirs.
The Vineyard
The 0.2-hectare micro-plot from which this Burgundy wine originates is located in the commune of Montagny, at altitude. Planted in the mid-1940s using massale selection, these very old vines flourish on an extremely limestone-rich hillside, close to a former quarry. The vineyard is farmed according to biodynamic principles, with no herbicides or synthetic fertilisers, favouring shallow soil work and the use of plant-based preparations to preserve biodiversity and vine health.
Winemaking and Ageing
Hand-harvesting and rigorous sorting precede a gentle vinification within a four-level gravity-flow winery, which limits the use of pumps as much as possible. Fermentation of the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2024 is triggered by indigenous yeasts. Ageing takes place over an extended period, at least two winters in oak barrels with prolonged contact on fine lees, adding richness to the wine. Bottling is carried out in accordance with the descending moon cycle.
