Description
The estate
Domaine du Cellier aux Moines was founded in 1130 by Cistercian monks from the Ferté Abbey. These monks were the first to build the famous Burgundy Clos.
Since 2004, the Pascal family have successfully tackled the restoration of the estate, giving it back all its vitality with a conversion to biodynamics.
The vineyard
In Givry, the vineyard of the Cellier aux Moines estate is spread across a 5-hectare vineyard surrounding the historic Cellier. The Givry Premier Cru "Clos du Cellier aux Moines" 2020 comes from this south-facing vineyard on a lightly ventilated slope. The vines are cultivated biodynamically on clay-limestone soils.
The vintage
A dry winter gave way to a warm spring with little rain, advancing an early budburst on the vine and flowering that arrived in mid-May. The summer was hit by severe drought, with a 200mm water deficit during fruit set and veraison. The teams’ vigilance and hard work led to the vineyard being managed in the best conditions despite the extreme weather that caused low yields. The harvest was of a great quality with concentrated, perfectly ripe and beautifully balanced grapes.
Domaine du Cellier aux Moines was awarded the Organic Agriculture certificate in 2020, which was also the fourth vintage under biodynamics.
