Palate
Structured and complex, the palate offers a lovely concentration of summery red berries while retaining a refreshing tension. The tannins are silky and velvety, lending the whole a great finesse without any astringency.

Food and wine pairing

This red wine pairs wonderfully with game meats, dark sauce-based dishes or preparations featuring morels and wild mushrooms. It will particularly shine alongside roast duck breast with red berries, braised squab with peas, or calf's liver with balsamic vinegar.

The estate

Founded in 1998, Domaine du Clos des Fées is a key reference in Roussillon, located in the south of France. Born from the vision of Hervé Bizeul, a former sommelier, and his wife Claudine Bizeul, who still run the estate today, this winemaking adventure began in an artisanal way before becoming a symbol of excellence. The estate spans around a hundred hectares, of which about forty are devoted to vines, and stands out for its approach respectful of biodiversity, producing bold and highly sought-after cuvées.

The vineyard

This IGP Côtes Catalanes wine comes from plots planted in 2012 at the heart of the Cirque de Vingrau. This exceptional terroir, forming a natural limestone amphitheater, benefits from clay-limestone soils offering excellent drainage. The altitude and variations in exposure create a microclimate cooler than the regional average, requiring later harvests. The estate practices sustainable farming, preserving vast areas of garrigue and forest to promote ecological balance.

The vintage

The year 2024 was marked by particularly hot weather conditions, a trend observed across France as a whole and felt with particular intensity in the Roussillon region.

Winemaking and aging

For the 100 Phrases pour Éventails 2024 cuvée, the grapes are harvested by hand. The winemaking process stands out for its whole-bunch fermentation, thus preserving the stems. The fermentation process, including malolactic fermentation, takes place in wooden vessels, notably oak demi-muids. Aging continues on the lees in these same barrels, allowing the wine to develop its full complexity. Bottling is carried out without any prior filtration.
