Description
Characteristics and Tasting Notes for Bois des Merveilles 2023 from Domaine Jean-Baptiste Senat
Tasting
Colour
A beautiful garnet red colour appears in the glass.
Nose
The nose reveals great aromatic complexity, opening with notes of ripe black fruit, strawberry and raspberry. It then evolves toward touches of liquorice, garrigue herbs, tapenade and chocolate, subtly underscored by nuances of undergrowth and a light oakiness.
Palate
On the palate, this wine offers a perfect balance between power and silkiness. Its texture is built on fine, grainy tannins, accompanied by moderate acidity. The long, flavourful finish extends the experience with delicate fruity and spicy notes.
Food and Wine Pairing
This wine pairs wonderfully with full-flavoured meats such as roast duck, young wild boar stew or beef cuts like a rib of beef or tournedos. It will also enhance slow-cooked dishes with Mediterranean herbs, fine charcuterie, or a board of aged cheeses, such as a Saint-Nectaire.
Service and Storage
The Bois des Merveilles 2023 can be enjoyed now for its freshness and elegance, while also offering excellent cellaring potential that will allow it to develop beautifully for many years to come.
The Elegance and Depth of a Red Wine from Minervois
The Estate
Founded in 1996 with the production of its first vintage, Domaine Jean-Baptiste Senat is located in Trausse, at the heart of the Languedoc. Now run by Jean-Baptiste and Charlotte Senat, this 15-hectare estate has established itself as a true pioneer of natural winegrowing in the region. Guided by an artisanal philosophy, the estate favours organic farming methods and minimal-intervention winemaking. Domaine Jean-Baptiste Senat is thus dedicated to producing digestible, elegant wines that authentically reflect the richness of their terroir.
The Vineyard
Located within the Minervois appellation, the vineyard extends across the foothills of the Montagne Noire. The vines, trained in a gobelet system to protect them from summer heat, thrive on a mosaic of clay-limestone soils interspersed with siliceous garrigue lenses. Yields are strictly limited to 30 hectolitres per hectare, and harvesting is carried out entirely by hand to ensure rigorous grape selection. This exceptional terroir is home to very old vines, including century-old Carignan and 60-year-old Grenache vines.
Winemaking and Aging
The Bois des Merveilles 2023 is vinified using whole-bunch grapes, preserving the integrity and freshness of the clusters. Fermentation, carried out exclusively with indigenous yeasts, lasts around two weeks. The wine is then aged for an extended period of 20 months in oak barrels, allowing it to develop its full complexity before being bottled at the estate.
Grape Varieties
Carignan (60%), Grenache (40%).
