Tasting
Color
The color reveals a brilliant golden-yellow hue, subtly enhanced with delicate greenish highlights.
Nose
With beautiful aromatic intensity, the nose opens with notes of grapefruit and white flowers. It stands out for its clean, precise structure, marked by a typical minerality reminiscent of gunflint, without any excessive herbaceous notes.
Palate
The palate offers precise tension and remarkable crystalline clarity, carried by a sharp acidity. The balance is perfect between the generosity of the fruit and the persistent minerality of the terroir. The finish, with beautiful length, stretches out with a refreshing liveliness and a delicate smoky touch.
Food and wine pairing
Ideal as an aperitif, this white wine pairs wonderfully with a seafood platter (oysters, langoustines, whelks) or grilled fish such as sea bass and sea bream. It also pairs very well with dishes such as cod in lemon sauce, roasted white poultry, as well as goat cheeses, notably the famous Crottin de Chavignol.
Service and storage
To fully appreciate the Fumette 2023, it is recommended to serve it slightly chilled, at a temperature between 8 and 10°C.
Other characteristics
Coming from a specific parcel selection on soils rich in sand and flint, this cuvée stands out for its warmer profile and a more generous, approachable fruity expression than the standards of its appellation.
The authentic and mineral expression of the Pouilly-Fumé terroir
The estate
Created in the 1980s under the name Domaine Hubert Veneau, the Domaine les Ormousseaux is located in Saint-Père, in the Centre-Loire region. Since April 2021, the estate has been run by Clément Jolivet, deeply attached to his family roots, and Riandri Visser, an internationally renowned South African winemaker. Spanning nearly 28 hectares across two appellations of the Loire valley, the estate stands out for its strong environmental commitment. Fully converted to organic farming with official certification in 2024, it produces authentic wines that faithfully express the uniqueness of their terroirs.
The vineyard
The plots dedicated to the Pouilly-Fumé appellation are located in the hamlet of La Roche, in the commune of Tracy-sur-Loire. Ideally positioned near the river, they benefit from a regulating microclimate and a breathtaking view of the Sancerre hill. The vines flourish at the heart of a former quarry from which a thousand tons of flint were extracted. This unique geological terroir, made up of ancient Cretaceous clays rich in flint and sand, limits the vigor of the vines to produce highly concentrated berries. The soil is worked mechanically, without any synthetic chemical products, in order to preserve underground biodiversity.
The vintage
The year 2023 proved to be a particularly favorable vintage. Weather conditions allowed for optimal ripeness, promoting excellent grape concentration while preserving the natural freshness essential to the balance of the berries.
Winemaking and aging
The harvest is carried out by hand and at night to prevent oxidation and preserve the aromatic freshness of the fruit. After careful selection, the whole bunches undergo gentle pressing. The heart of the juice is carefully separated from the press ends to maintain maximum natural acidity. Following an overnight cold settling, the Fumette 2023 ferments exclusively in stainless steel tanks. This minimalist approach, with no time spent in wood, preserves the purity of the fruit and the mineral expression of the terroir.
