Description
The balance and richness of a Tuscan wine by Il Borro
The producer
After discovering the idyllic landscape of the medieval village of Il Borro, not far from Florence, during a hunting trip, Ferruccio Ferragamo acquired an estate in 1993. His ambition was to produce excellent wines from an 85-hectare vineyard that would be recognised as one of the finest Tuscan wines.
The wine
Il Borro's 2018 Polissena is made from grapes grown in vineyards situated at an altitude of around 350 metres, on schist soils providing an excellent drainage.
The vinification and ageing
Harvested, destemmed and sorted by hand, the grapes are then pressed and placed in tanks using gravity. Pre-fermentation maceration for 22 days. Alcoholic fermentation for about 10 days before being put into barrels. On the first day of fermentation, 10 to 20% of the contents are removed in order to develop the concentration of the remaining juice. The wine is aged for at least 12 months, with a further month in tanks and then, following filtration, a further 6 months in the bottle before being put on the market.

Il Borro's 2018 Polissena is a 100% Sangiovese.

Colour
Concentrated, the colour is a beautiful ruby red.
Nose
The nose blends fragrances of marasca cherry, peony and black pepper with notes of sandalwood, juniper, liquorice and rhubarb.
Palate
Lively and well-balanced, the palate is seductive with fine tannins and a long finish with delicious balsamic and mineral notes.
Food and wine pairing
This Tuscan wine is ideal with meats (wild boar, chianina beef), cold cooked meat and mature cheeses.
