This Volnay pairs perfectly with suckling pig and veal shank, enhancing these meats with its elegant structure. It also pairs wonderfully with aged cheeses, creating delicious combinations.
Serving and ageing

The estate
Founded in 1797 by Jean Latour, La Maison Louis Latour has been perpetuating ancestral know-how for over two centuries. Owner of 33 hectares of exceptional vineyards in Burgundy, including Grands Crus in Corton, the Latour family still manages this historic house. Their unique cooperage expertise gives them exceptional mastery of ageing, since their establishment on Rue des Tonnelliers in 1867.
The vineyard
The village of Volnay occupies a privileged position on a promontory overlooking the Burgundy plain, near Pommard. The vines, averaging 30 years old, thrive on clay-limestone soils, benefiting from an exceptional terroir. Hand-harvesting and controlled yields of 40 hl/ha guarantee optimal grape quality.
Winemaking and ageing
Traditional winemaking in open vats, followed by a complete malolactic fermentation. Ageing takes place over 10 to 12 months in French oak barrels from the Louis Latour cooperage, with 15% new wood and medium toast, thus preserving the pure expression of the terroir.
Grape variety
This wine is made exclusively from Pinot Noir, the emblematic grape variety of Burgundy, which here reveals all its finesse and elegance characteristic of the Volnay appellation.
