Tasting
Appearance
The wine shows a pale yellow hue, luminous and brilliant, reflecting great visual purity.
Nose
The bouquet opens with delicate orchard fruit notes, intertwined with vegetal aromas of pine sap. Subtle floral, aniseed and white pepper touches round out this beautiful complexity.
Palate
The attack is round and harmonious, offering a generous texture. The palate is then carried by a dry, lithe and vertical frame, free of any heaviness. The finish stretches out at length on refreshing saline notes.
Food and Wine Pairings
This white wine pairs wonderfully with delicate fish, such as a sea bream ceviche or scallops with citrus fruits. It also goes very well with white meats, such as poultry or veal enhanced with fresh herbs and a light sauce.

The Tension and Purity of a Languedoc White Wine by Mas Jullien
The Estate
Founded in 1985 by Olivier Jullien, who remains its current owner and manager, Mas Jullien has established itself as a major player in the qualitative renewal of the Languedoc. Located in Jonquières, this estate of around twenty hectares stands out for its demanding approach, respectful of all living things. Having now turned away from the dogmas of organic certification while keeping to its principles, Olivier Jullien crafts profound, authentic wines of terroir. The estate is now recognised by critics as a true benchmark of French viticulture.
The Vineyard
The vines for this IGP Pays de l'Hérault cuvée thrive on the terroirs of Jonquières, within the Terrasses du Larzac. This area enjoys a climate with cool nights, which favours slow ripening. The soils, made up of clay and dotted with highly draining limestone gravel, force the vine to draw water from deep below. The vineyard is managed using methods inspired by organic farming, with light ploughing and exclusively hand-harvested grapes to preserve the quality of the berries.
Vinification and Ageing
The making of Les Derniers Etats d'Âme 2025 is characterised by minimalist work in the cellar. After gentle pressing, fermentations start with indigenous yeasts. Ageing takes place mainly in demi-muids on fine lees for around one year. To preserve all of the wine's freshness, tension and aromatic clarity, no systematic bâtonnage is carried out during this period.
