Appearance
The wine displays a pale, delicate pink hue, illuminated by subtle highlights reminiscent of peach and salmon.
Nose
The nose reveals a fine aromatic complexity dominated by notes of small wild berries such as redcurrant, raspberry, and fresh blackcurrant. Delicate floral touches mingle with hints of juniper and light spices, while aromas of exotic citrus—particularly bergamot, fresh lemon, and grapefruit—enhance the bouquet.
Palate
On the palate, this rosé shows a well-balanced structure built around a lively acidity reminiscent of fresh citrus. The wild berry flavors identified on the nose unfold with precision, offering a texture that is both vibrant and silky. The finish stands out for its lingering freshness, lifted by a subtle touch of mineral salinity that reflects the estate’s limestone-marl terroir.
Food and wine pairings

The estate
Founded in 1204 by the Order of the Knights Templar, the Commanderie de Peyrassol stands as an exceptional winegrowing institution in Provence. Acquired in 2001 by Philippe Austruy, the estate spans around 850 hectares, including forests, garrigue, and vineyards, located on the foothills of the Massif des Maures. Now led by Alban Cacaret, the estate embodies a philosophy rooted in respect for the terroir, remarkable biodiversity, and organic farming. The property is also distinguished by its open-air contemporary art collection featuring more than one hundred major works.
The vineyard
"Cuvée des Commandeurs" is produced from young estate vines complemented by fruit sourced from partner growers practicing organic farming. The Peyrassol vineyard benefits from an exceptional terroir in the Côtes de Provence appellation, characterized by low-fertility soils composed of Triassic limestone marls, with a significant proportion of pebbles and gravel. This soil composition is particularly well suited to crafting vibrant, energetic rosé wines. The estate is located just sixteen kilometers from the Mediterranean, enjoying a temperate climate influenced by maritime proximity.
The vintage
The growing season began with a harsh winter that provided the vines with optimal water reserves. The summer was warm and dry, without extreme heatwaves, encouraging gradual and even ripening. Harvest began under intense sunshine, allowing grapes to be picked at perfect maturity with a fine aromatic profile.
Winemaking and aging
"Cuvée des Commandeurs" 2025 is crafted according to organic farming principles. Winemaking favors the direct pressing method, limiting contact between the juice and grape skins to achieve its characteristic pale pink color. Fermentations are conducted to preserve the wine’s aromatic freshness and natural vibrancy, reflecting the authentic expression of the Provençal terroir.
