Tasting notes
Appearance
The wine shows a luminous pale yellow hue, adorned with subtle green and golden highlights.
Nose
The bouquet opens with stone fruit aromas such as white peach, accompanied by pear and green apple. Notes of citrus and white flowers intertwine with an elegant reductive note reminiscent of gunflint, complemented by discreet brioche touches.
Palate
Taut and electric, the palate offers a texture that is both creamy and finely chalky. Vibrant acidity carries flavours of crisp fruit and citrus, stretching into a long finish marked by a beautiful mineral salinity.
Food and wine pairings
This white wine pairs wonderfully with premium fish, grilled or served in a sauce, with shellfish such as plancha-cooked prawns, and with poultry in cream sauce. It also goes very well with delicate soft cheeses.
Serving and cellaring
To fully enjoy the Chardonnay "Éclat de Calcaire" 2024, we recommend serving it at a temperature between 10 and 12°C. Allowing it to breathe briefly in the glass will reveal its full complexity. This wine can be enjoyed now and will continue to evolve favourably until around 2029.

The estate
Officially founded in 2016, Pierre Girardin quickly established itself as an essential reference in France. Representing the thirteenth generation of an illustrious winegrowing family, Pierre-Vincent Girardin now leads the estate. Drawing on a precious legacy handed down by his father, the young winemaker cultivates an approach that combines tradition and modernity. The estate stands out for its commitment to producing wines of great purity, focused on tension and minerality. With environmentally respectful viticulture, Pierre Girardin crafts contemporary cuvées that enhance the expression of limestone terroirs.
The vineyard
This Vin de France comes from vines aged between thirty and over forty years, deeply rooted in clay-limestone soils. The estate favours sustainable farming, strongly inspired by organic practices, with controlled yields and soil management that respects biodiversity. The grapes are harvested by hand to preserve the integrity and freshness of the berries.
Vinification and ageing
The whole bunches are gently pressed before fermentation begins with indigenous yeasts. The Chardonnay "Éclat de Calcaire" 2024 is aged on fine lees for around nine months in 456-litre oak barrels, with a moderate proportion of new oak. The wine then spends several months in stainless steel tanks to refine its precision and preserve all its vivacity before bottling.
