Tasting
Appearance
This wine reveals a dark, deep colour, almost black, brightened by subtle violet highlights that underscore its lovely vitality.
Nose
The bouquet is particularly intense, releasing deep aromas of wild berries. This fruity backbone is enhanced by delicate notes of flowers, bark, pine needles and earthy touches, all lifted by smoky and spicy nuances.
Palate
From the first sip, the wine expresses an austere elegance and remarkable liveliness. The texture rests on fine tannins and marked acidity, revealing a schist minerality with graphite accents. The whole offers a lingering finish, combining restrained power and brightness.
Food and wine pairings
This cuvée will pair beautifully with flavourful meats such as Peking duck, roasted milk-fed lamb or a rosé veal fillet. More generally, it will enhance roasted red meats, game and slow-cooked dishes.
Serving and cellaring
To fully appreciate Les Tosses 2021, it is recommended to serve it at a temperature between 15 and 17 °C, ideally after decanting. Endowed with immense potential, this wine can rest in the cellar and will be at its best until around 2041.
The elegance of a great red from the Priorat appellation
The estate
Founded in 2001 by Eben Sadie, Dominik Huber and Jaume Sabaté, Terroir al Límit farms a vineyard of approximately 25 hectares in Catalonia. Now led by Dominik Huber, the estate has established itself as an essential benchmark in the region. The domain stands out for its commitment to producing digestible and airy wines, in contrast to the opulent local standards. Thanks to a manual viticulture, certified organic and guided by biodynamics, the team sublimates the authentic expression of its high-altitude terroirs.
The vineyard
The plot from which this cuvée is sourced lies in Torroja, in the heart of the Priorat. Perched at 600 metres of altitude on steep south-west-facing slopes, the century-old vines grow on very poor black schist soils known as llicorella. This extreme terroir, cultivated manually in bush-vine style according to biodynamic principles, imposes naturally very low yields but ensures exceptional concentration and freshness.
Winemaking and aging
The crafting of Les Tosses 2021 relies on a gentle, low-intervention approach. After hand harvesting, fermentations begin spontaneously thanks to indigenous yeasts, with whole clusters retained. Macerations take place slowly in truncated conical concrete vats, without aggressive punch-downs or pump-overs in order to preserve the finesse of the tannins. The wine then enjoys an aging of about eight months, exclusively in concrete vats, to maintain the brightness of the fruit and the energy of the terroir.
