Description
Tasting Notes and Characteristics of Haiku 2022 by Castello di Ama
Tasting
Appearance
The wine reveals a deep purple-red colour, illuminated by intense ruby highlights.
Nose
The aromatic bouquet opens with fruity notes of raspberry, blackcurrant and wild berries. This ensemble is subtly enhanced by spicy touches of pepper, tobacco and wild herbs.
Palate
With a lovely natural freshness, the palate is elegant and beautifully defined. It expresses a clear varietal identity and lingers on a silky-textured finish.
Food and Wine Pairing
This wine pairs wonderfully with roasted or grilled red meats, such as a bistecca alla fiorentina, as well as game served with berry or herb sauces. It also pairs very well with slow-cooked Mediterranean dishes or aged hard cheeses such as pecorino.
Serving and Ageing
To fully enjoy this 2022 vintage, it is recommended to serve it at a temperature between 16 and 18 °C, taking care to let it breathe beforehand. Thanks to its solid structure, it has an ageing potential of several years in the cellar.
A Modern Expression of Tuscan Wines by Castello di Ama
The Estate
Founded in 1976 by four Roman families, Castello di Ama is located in Gaiole in Chianti, in Tuscany. Now run by Lorenza Sebasti and Marco Pallanti, the estate spans 260 hectares, including 75 hectares of vineyards. A pioneer in the concept of cru, the estate stands out for its commitment to sustainability, certified by Equalitas, and for its integration of contemporary art at the heart of a medieval village.
The Vineyard
The grapes come from the Montebuoni vineyard in IGT Toscana, from plots located between 420 and 500 metres above sea level. The vines are planted at a high density of 5,200 vines per hectare on very stony clay-limestone soils, with north-west and south-east exposures. The estate applies sustainable viticulture methods, including the mating disruption technique, and guarantees the absence of synthetic chemical residues.
The Vintage
The year began with particularly mild winter months. From May onwards, the climate became extremely dry, making it one of the hottest seasons ever recorded. Rain returned in mid-August, without causing any disease thanks to the excellent health of the grape clusters.
Winemaking and Ageing
To craft this wine, each grape variety was vinified separately in stainless steel tanks maintained between 30 and 32 °C, using exclusively indigenous yeasts. After macerations lasting 24 to 25 days accompanied by manual pump-overs, malolactic fermentation took place in tank. The blend was then created before ageing for around twelve months in fine-grain oak barrels, including 20% new barrels.
Grape Varieties
This wine is the result of a blend of 50% Sangiovese, 25% Merlot and 25% Cabernet Franc.
