Tasting notes
Colour
Grande Réserve de Devaux reveals a golden yellow hue, a reflection of the predominance of Pinot Noir and its extended ageing in the cellar.
Nose
The nose opens with floral notes delicately intertwined with stone fruits, led by white peach and apricot, complemented by a touch of yellow plum.
Palate
The palate is velvety and flavourful, carried by a lovely fruity generosity, before closing on a chiselled, taut finish, the hallmark of a beautiful balance between roundness and freshness.
Food and wine pairings
This Champagne is ideally enjoyed as an aperitif, where its generosity and tension on the finish make it a perfect companion. It also pairs very well with dishes during a meal, particularly fish or white meats.
Serving and cellaring
Grande Réserve Non-Vintage Devaux is served chilled, at approximately 8 to 10°C, in glasses that allow the finesse of its effervescence to be fully appreciated.
A Champagne from the Côte des Bar, crafted by Maison Devaux
The estate
Founded in 1846 in Épernay under the impetus of Madame Claude-Josephte Devaux, Champagne Devaux was passed on in 1987 to the Union Auboise cooperative, which owns it today. Based at the Manoir de Villeneuve in Bar-sur-Seine, in the heart of the Côte des Bar, the House draws on a cooperative vineyard of nearly 1,060 hectares. Its cellar master, Michel Parisot, has been working for over thirty years to showcase Pinot Noir.
The vineyard
The grapes for this cuvée come mainly from the Côte des Bar, an essential terroir of Champagne where Pinot Noir dominates on clay-limestone slopes. Chardonnay completes the blend thanks to plots located in Montgueux, Vitry and the Côte des Blancs, adding finesse and freshness that echo the generosity of the Pinot Noir from the Aube.
The blend
This Champagne combines several harvest years, enriched with approximately 25% reserve wines, mostly aged in oak barrels, to bring consistency and complexity to the cuvée.
Vinification and ageing
Only the first pressing of the Pinot Noir and Chardonnay grapes is used to produce Grande Réserve Non-Vintage. Alcoholic fermentation takes place in stainless steel tanks, preserving the purity of the fruit, while malolactic fermentation is carried out in full, adding roundness and softness. The cuvée then benefits from a minimum of 36 months' maturation on lees in bottle, encouraging the development of its aromatic complexity.
Grape varieties
The blend is composed of 70% Pinot Noir and 30% Chardonnay.
