Appearance

Nose
The bouquet opens with an intense and warm impression, featuring notes of stewed fruit (apricot, mirabelle plum) and sweet spices. As it aerates, the nose evolves toward pastry-like expressions, complemented by tertiary aromas of dried flowers and tobacco.

Palate
The attack is round with a warm balance. The perfectly integrated effervescence is accompanied by lively acidity and a texture that is both warm and delicate, delivering a lovely sapidity.

Food and Wine Pairings

The estate

Founded in 1764, Champagne Cossy has been run by Sophie Cossy for the past decade. Located in Jouy-les-Reims, a Premier Cru village in the Montagne de Reims, the vineyard spans several communes, offering a diversity of terroirs. Sophie has reinterpreted the inherited cuvées to reflect her style while preserving the family heritage. The grape varieties used include pinot noir, chardonnay, and pinot meunier. A commitment to sustainable practices and a distinctive feminine approach characterize this House.

The vineyard

Les Raisins de Pargny comes from the terroirs of Pargny-les-Reims in the Petite Montagne de Reims, an essential Champagne terroir. The chardonnay is sourced from the Les Monts Coupes 1 and 2 and Les Ecus parcels, while the pinot noir is grown on Les Montilleux, Les Viraux, and Les Beaux-Regards. These Premier Cru terroirs impart the wine's distinctive minerality and elegant structure, typical of this prestigious appellation.

The vintage

The year 2020 was marked by a mild winter and an early spring, followed by a warm, sunny summer with periods of drought. These climatic conditions favored optimal ripening of the grapes, offering a fine balance between freshness and concentration. The harvest, carried out at perfect maturity, yielded grapes of exceptional quality, promising a vintage with character.

Winemaking and aging

Les Raisins de Pargny 2020 benefits from vinification entirely in 228-liter barrels, allowing for complex aromatic development and a rich texture. This traditional method encourages oxygen exchange and brings a subtle woody note that blends harmoniously with the whole. The production, limited to 1,250 bottles, reflects a qualitative and artisanal approach.
