The Estate

Founded in 1720 in Beaune by Edme Champy, a cooper, Champy remains the oldest wine merchant house in Bourgogne. Having become the region’s first merchant-éleveur after the French Revolution, it now spans 21 hectares across prestigious appellations. Run since 1990 by the Meurgey family under the leadership of Pierre Meurgey, Champy stands out for its unique status as the last active producer within the city walls in the heart of Beaune, working from 15th-century cellars.

The Vineyard

The Savigny-Les-Beaune Village "Aux Fourches" comes from the lieu-dit "Aux Fourches", located in the Côte d'Or. The vineyard lies on a clay-limestone terroir, gravelly and stony, characterized by light, relatively infertile soils. The vines are planted between 220 and 360 meters above sea level, benefiting from a range of exposures from south to northeast, including southeast and east. This terroir covers 1.4 hectares farmed by Champy.

Vinification and Aging

The grapes for the Savigny-Les-Beaune Village "Aux Fourches" 2010, from organic farming, undergo cold maceration before fermentation with native yeasts. Maceration lasts three weeks. Aging takes place in oak barrels for twelve months, with 25 to 30% new oak. Bottling is carried out after fining with egg white, without filtration.
