The estate
The origin of the estate is very ancient. The vines have been cultivated on the slopes of what is today the Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1st Grand Cru Classé "A", possesses one of the most beautiful terroirs of Saint-Émilion. The Château Pavie is recognized for the structure and elegance of its wines resulting from a harvest contained in yields lower than the average of the appellation in order to reveal all the nuances of this exceptional terroir.
The vineyard
Château Pavie is a wine from Saint-Émilion from a single 42-hectare vineyard. Located southeast of the hill of Saint-Émilion, the vineyard spreads over three levels up the slope, with vines averaging 36 years old. The "plateau" (85 meters above sea level) is composed of a clay-limestone soil above the limestone with asterias and the "middle of the slope" (55 meters above sea level) is composed of a fine-textured brown clay-limestone soil. The "foot of the slope" is composed of sandy / sandy-clay soils and sandy-gravelly soils.
Particular attention is paid to the vineyard, part of which has been the subject of a replanting plan including the raising of the trellising to increase the leaf area, a specific pruning according to the age of the vines, thinning and leaf removal.
Vinification and aging
Hand harvesting with sorting. Vinification in thermo-regulated wooden vats. The malolactic fermentation is carried out in barrels as is the aging (65% new barrels, 35% of a wine).
Blend
Château Pavie 2024 is a blend of merlot (51%), cabernet franc (32%) and cabernet sauvignon (17%).
