Colour
Of moderate intensity, the wine displays a ruby-red hue with bright, translucent highlights.
Nose
The aromatic bouquet releases scents of fresh red and black fruit, led by vibrant cherry. These are interwoven with mineral notes, white flowers, fresh herbs and a subtle hint of spice.
Palate
Medium-bodied with a silky texture, the palate charms with its supple tannins and concentrated fruit. Marked by a lovely mineral freshness, it stretches out into a long, lingering finish with saline and chalky accents.
Food and Wine Pairings
This red wine pairs beautifully with classic dishes such as bœuf bourguignon, grilled duck breast or lamb shank. It is also a fine match for delicate fish such as smoked salmon, vegetarian mushroom dishes and aged cheeses such as Comté.

The Estate
The story of Domaine Boris Champy began in 1984, when Didier Montchovet founded the estate in Nantoux, in Burgundy, with a half-hectare plot. A pioneer of ecological viticulture, the estate obtained Demeter biodynamic certification as early as 1985. Over the decades, the vineyard has grown while remaining true to its environmentally respectful philosophy. In 2020, oenologist Boris Champy took over the estate. Drawing on a wide range of experience, the current owner upholds the domaine's identity by showcasing the authentic expression of its high-altitude terroirs through sustainable, minimal-intervention practices.
The Vineyard
Lying at an altitude of 377 metres, the Au Clou plot gives rise to this Bourgogne Hautes-Côtes de Beaune. This distinctive terroir stands out for its very stony soils, made up of white limestone pebbles resting on a clay-marl subsoil. This geology provides excellent drainage while ensuring optimal water reserves. The cool microclimate brought by the altitude allows the grapes to ripen slowly, thereby preserving a lovely acidity. The vines are Guyot-pruned and planted at a density of around 10,000 vines per hectare, with the utmost respect for local biodiversity.
The Vintage
The 2023 growing season in Burgundy was shaped by unusual weather conditions, markedly different from those of the previous year. These climatic variations called for particular care in the vineyard and rigorous sorting at harvest in order to pick berries at perfect physiological and phenolic ripeness.
Winemaking and Ageing
The grapes are harvested by hand and then meticulously sorted so that only the finest bunches are kept. The vinification of the Bourgogne Hautes-Côtes de Beaune "Altitude 377 Le Clou" 2023 includes 80 to 100% whole bunches. Fermentation takes place naturally with indigenous yeasts in 228-litre oak barrels, without artificial temperature control. The wine is then aged for around twelve months in once-used barrels to preserve the vibrancy of the fruit, before resting in stainless steel tanks prior to bottling.
