Tasting notes
Appearance
This wine reveals a beautiful vivid red colour, enhanced by deep, dark and brilliant highlights.
Nose
Particularly expressive and explosive, the bouquet reveals great freshness. It exudes complex aromas of black and wild fruits such as blackberry and raspberry, harmoniously blended with scents of garrigue, undergrowth and black olive. Spicy, cocoa and coffee touches perfect this rich olfactory palette.
Palate
The attack shows pleasant freshness, opening onto a full, fleshy and velvety texture. With strong aromatic intensity, the palate is dominated by black fruits along with subtle cocoa and toasted notes. The whole is perfectly balanced and structured by remarkably fine tannins, leading to a captivating finish of remarkable length.
Food and wine pairings
This distinguished cuvée pairs wonderfully with flavourful red meats, such as a roast rack of lamb with its jus, or with game dishes such as wild boar stew, venison or wild duck. When it comes to cheese, it will beautifully complement pressed cheeses, whether cooked or uncooked, such as Beaufort, Ossau-Iraty, Cantal or Saint-Nectaire.
Serving and cellaring
To fully appreciate the complexity of the Les Cistes 2016 vintage, it is strongly recommended to decant it well in advance, at least one hour before tasting, and to serve it at an ideal temperature of between 16 and 18°C. With a structure built to withstand time, this red wine boasts exceptional ageing potential, allowing it to be kept in the cellar for more than fifteen years, at least until 2031.
Domaine Peyre Rose crafts a full-bodied and well-balanced Vin de France
The estate
Founded in the early 1990s by Marlène Soria, who remains its current owner and manager, Domaine Peyre Rose is a true reference in the Languedoc region. Located on the heights of Saint-Pargoire, this approximately 25-hectare vineyard is farmed with rare rigour, in the deepest respect for living organisms. The winemaker crafts long-ageing cuvées with a unique personality, which have significantly helped establish the region among the greatest winegrowing terroirs.
The vineyard
The vines behind this Vin de France are planted on the highest part of the estate, in the heart of a pristine environment of wild garrigue and pine forests. The vines grow in extremely stony, poor and hard soils, encouraging deep rooting. The entire vineyard is rigorously farmed according to the principles of organic and biodynamic viticulture. Work is essentially carried out by hand, with strict yield control to ensure optimal berry concentration.
Winemaking and ageing
The creation of the Les Cistes 2016 vintage relies on gentle and patient methods. After harvest, the grapes undergo partial destemming before beginning a long maceration, accompanied by light pump-overs to extract matter with great finesse. The ageing process is exceptionally extended: the wine rests for nearly ten years, mostly in tank and a quarter in wooden foudre. Finally, further bottle ageing completes its maturation before it is released onto the market.
Grape varieties
This blend is very largely dominated by Syrah, which accounts for 90% of the composition. It is thoughtfully complemented by 10% of Grenache Noir and Mourvèdre.
