Tasting
Colour
Clear and bright, the wine reveals a deep ruby hue with garnet and violet highlights.
Nose
Showing lovely intensity, the nose releases aromas of fresh red fruit such as cherry and raspberry. It then opens onto delicate floral notes of violet and peony, underscored by subtle spice, well-integrated oak and a minerality with chalky, smoky accents.
Palate
The attack is energetic, giving way to a palate that combines power and freshness. The dense, silky texture is perfectly balanced by lively acidity and finely structured tannins. The finish impresses with its length, precision and aromatic persistence.
Food and wine pairing
This red wine pairs beautifully with red meats such as beef fillet or duck breast, as well as with fine game such as venison. It is also an excellent match for slow-cooked dishes such as coq au vin or mushroom risotto, and for characterful cheeses such as Époisses or Comté.
Serving and cellaring
For optimal enjoyment, we recommend decanting this Gevrey-Chambertin 1er cru "En Ergot" 2023 one to two hours before serving it at a temperature between 16 and 18°C. This age-worthy wine can already be enjoyed now but will continue to evolve in the cellar until around 2040.

The estate
Although the winegrowing family's roots in Burgundy date back to the 1870s, Domaine Trapet Père et Fils truly came into being in its current form in 1993. A pioneer of biodynamics from the 1990s onwards, the estate tends a 18.5-hectare vineyard. Today, Pierre and Louis Trapet are at the helm, continuing the philosophy initiated by their parents, Jean-Louis and Andrée. Renowned for its prestigious holdings, the estate crafts wines that combine tradition, agronomic innovation and a deep respect for terroir.
The vineyard
Located in the eastern part of the Gevrey-Chambertin appellation, the premier cru climat "En Ergot" enjoys an ideal exposure facing the grands crus. The old vines thrive on slopes of brown clay-limestone soils, which are shallow at the surface and rest on a substrate rich in limestone and fossils, providing excellent natural drainage. The vineyard is farmed entirely according to biodynamic principles, without any herbicides or synthetic products, with extensive experimentation in trellising and vine training to preserve the plant's balance.
Winemaking and ageing
This Gevrey-Chambertin 1er cru "En Ergot" 2023 is vinified traditionally, with minimal intervention, in open vats. A variable proportion of whole bunches is used, with natural fermentations and gentle extraction. The wine is then aged for 15 to 18 months in oak barrels, around a quarter of which are new. Finally, it is bottled without fining or filtration to preserve the full purity of the fruit.
