Tasting
Colour
The colour reveals a shimmering violet hue, enhanced by delicate red highlights.
Nose
Intensely fragrant, the nose first reveals aromas of leather, sweet spices such as cinnamon and tobacco. With aeration, it evolves towards notes of garrigue, red fruits as well as subtle touches of eucalyptus.
Palate
The attack is broad and rich, marked by sweet spices. The palate stands out with tannins of great finesse that structure the whole with precision. The long, voluptuous finish lingers on delicious caramelised nuances.
Food and wine pairing
This red wine pairs wonderfully with full-flavoured meats such as prime rib of beef, but also with duck à l'orange or dishes in sauce such as wild boar stew or a traditional daube.
Service and storage
The Guilhem de Gaucelm 2022 can be enjoyed from 2026, but it will continue to develop its complexity and can be savoured until around 2037.
Other characteristics
This wine is bottled without filtration, which preserves all its aromatic complexity. The yields for this cuvée are also particularly low, limited to between 10 and 20 hectolitres per hectare.
The authentic expression of a great Languedoc terroir by Héritage du Pic Saint-Loup
The estate
Founded in 1992 by brothers Xavier, Pierre and Jean-Marc Ravaille, who still run the estate today, Héritage du Pic Saint-Loup spans around forty hectares in the Languedoc, France. Located in Saint-Mathieu-de-Tréviers, this family estate has established itself as a benchmark of its appellation. Pioneers in their environmental approach, the owners adopted biodynamics as early as 1999, placing respect for the ecosystem at the heart of their philosophy in order to produce wines of great purity.
The vineyard
The vines dedicated to this cuvée flourish on the slopes of Pic Saint-Loup, benefiting from a Quaternary clay-limestone terroir dotted with rolled pebbles that ensure excellent drainage. This unique microclimate is characterised by wide temperature swings between hot days and cool nights, favouring optimal ripening. The vines, trained in the traditional goblet method, are over eighty-five years old, giving the grapes exceptional concentration.
The vintage
2022 offered particularly favourable climatic conditions in the region. The specific weather patterns of this vintage allowed the vines to overcome the challenges of the season, resulting in a perfectly healthy harvest ideal for producing wines of great complexity.
Winemaking and aging
The winemaking of the Guilhem de Gaucelm 2022 follows a traditional method, using exclusively indigenous yeasts and manual punching down of the cap. The wine is then aged over a long period of twenty-four to thirty months, mainly in large wooden foudres and a few barrels, with a very limited proportion of new oak in order to preserve the brightness of the fruit.
