Description
An aromatic and refined Tuscan wine by Il Borro
The estate
During a hunting trip, Ferrucio Ferragamo, stumbled upon the most pleasant discovery that is the idyllic scenery of the medieval village of Il Borro, on the outskirts of Florence. He acquired an estate in 1993, seeking to produce excellent wines from the 85-hectare vineyard, that are now among the finest Tuscan wines.
The wine
Produced in the IGT Toscana, Il Borro is made from vineyards located, on average, at 300 metres above sea level.
The vinification and ageing
Harvested, destemmed and sorted by hand, the grapes are then pressed and placed in tanks using a gravity flow method. Vinification by grape variety. Pre-fermentation maceration of 22 days. On the first day of fermentation, 10 to 20% of the tank contents are removed to develop the concentration of the juice.
Alcoholic fermentation in stainless steel tanks for about 10 days before filling the old barrels. The juice is then transferred to new Allier oak barrels for malolactic fermentation. Following the blend, the 18-month ageing period is completed by an additional 8 months in the bottle before being put onto the market.
The blend
Il Borro 2018 is a blend of Merlot (50%), Cabernet Sauvignon (35%) and Syrah (15%).

Colour
Intense ruby colour with purple highlights.
Nose
Concentrated, the nose gives off fragrances of undergrowth and spices.
Palate
Full, the mouth seduces with its supple tannins, its balance and its beautiful length.
Food and wine pairing
This Tuscan wine is ideal with meat (wild boar stew, a Florentine style T-bone steak, braised beek cheeks) or mature cheeses.
