Description
Characteristics and Tasting Tips for the Rully Village 2025 by Jean-Charles Fagot
Food and Wine Pairings
This Rully Village 2025 pairs beautifully with fine charcuterie, such as ham in parsley aspic, snails in parsley butter, white meats in sauce and shellfish gratins. It is also an excellent match for grilled fish, shellfish and soft-rind cheeses.
A Rully Village true to the tradition of the Côte Chalonnaise
The estate
The Fagot family has been established in Corpeau, between Puligny-Montrachet and Chassagne-Montrachet, since 1860, although the wine estate was officially founded in 1920. Now run by Jean-Charles Fagot, a third-generation winemaker trained at the Lycée Viticole de Beaune, the estate covers approximately 4 hectares in Corpeau and Chassagne-Montrachet. As a négociant-éleveur, Jean-Charles Fagot vinifies, ages and bottles all of his wines himself, complementing this work with his activity as a restaurateur at the Auberge du Vieux Vigneron.
The vineyard
This Rully Village 2025 comes from hillside vineyards in Rully, the northernmost village of the Côte Chalonnaise. The south-east-facing plot rests on clay-limestone soils, locally covered with lighter sandy deposits. The Chardonnay vines that make up this cuvée are farmed according to the principles of lutte raisonnée.
Winemaking and ageing
Made from hand-harvested grapes, this Rully Village 2025 is vinified using a traditional method. Fermentation takes place under temperature control, relying on the indigenous yeasts naturally present on the grape skins. This Burgundy wine is then aged in French oak barrels, helping to refine its structure.
