Characteristics and tasting recommendations for the Volnay 1er Cru "En Chevret" 2018 from Louis Latour
Tasting
Color
Beautiful dark color with deep garnet highlights.
Nose
The nose reveals an intense palette of black fruits (blackberry, blueberry and blackcurrant).
Palate
The palate is round, dominated by cherry and licorice. Silky tannins impart a velvety texture, while the lively, fresh finish pleasantly lingers.
Food and wine pairings
This Volnay 1er Cru pairs perfectly with a veal chop in cream sauce with morels, game or aged cheeses.
Serving and cellaring
This wine is ideally served at a temperature between 15 and 17 °C, and can be cellared and will evolve until around 2033.
A silky and fruity red Premier Cru from Burgundy
The estate
Founded in 1797 by Jean Latour in Aloxe-Corton, the Burgundian house Louis Latour has its origins in 1731 when this family of coopers acquired their first parcels in the Côte de Beaune. A family-owned estate run by the Latour family for over two centuries, it now operates the largest Grands Crus estate in the Côte d'Or in Burgundy, with its 50 hectares including exceptional parcels such as Corton Grèves and Corton-Charlemagne.
The vineyard
The "En Chevret" climat is situated below the departmental road, just beneath the "Caillerets" parcel, on the border with Meursault. This Volnay terroir benefits from a particular exposure and clay-limestone soils that impart great elegance vintage after vintage. The vines, averaging 25 years of age, produce a controlled yield of 35 hl/ha.
Winemaking and ageing
Hand harvesting is followed by traditional vinification in open vats with complete malolactic fermentation. Ageing takes place for 10 to 12 months in French oak barrels from the Louis Latour cooperage, with 35 % new wood at medium toast.
Grape variety
100 % Pinot Noir.
