Tasting

Color
The color shows a beautiful deep ruby hue.

Nose
The bouquet reveals a beautiful aromatic complexity with notes of cherry and undergrowth, enriched by toasty nuances. Black fruit aromas blend harmoniously with floral and spicy touches.

Palate
The attack is ample and round, supported by lovely freshness. Silky tannins structure a generous palate with flavors of black cherry, licorice, and pepper that unfold on the finish.

Food and wine pairings

This Volnay 1er Cru pairs perfectly with veal cutlets in cream with morels, game, or mature cheeses.

Serving and aging

This wine is best enjoyed at a temperature between 15 and 17°C, and can be cellared and aged for around 7 to 15 years.

A Premier Cru of Volnay with silky tannins and Burgundian elegance

The estate

Founded in 1797 by Jean Latour in Aloxe-Corton, the Burgundian house Louis Latour traces its origins back to 1731 when this coopering family acquired its first parcels in the Côte de Beaune. A family-owned estate run by the Latour family for over two centuries, it now operates the largest domain of Grands Crus of the Côte d'Or in Burgundy with its 50 hectares including exceptional parcels such as Corton Grèves and Corton-Charlemagne.

The vineyard

The "En Chevret" climat lies below the departmental road, just under the "Caillerets" parcel, on the border with Meursault. This terroir of Volnay benefits from a unique exposure and clay-limestone soils that confer great elegance to the wine vintage after vintage. The vines, averaging 25 years old, yield a controlled production of 35 hl/ha.

Winemaking and aging

Hand harvesting is followed by traditional winemaking in open vats with complete malolactic fermentation. Aging takes place for 10 to 12 months in French oak barrels from the Louis Latour cooperage, with 35 % new wood at medium toast.
