Tasting
Color
Deep ruby color with lovely garnet reflections.
Nose
On the nose, aromas of blackcurrant, blackberry and Morello cherry unfold, enhanced by hints of roasted almond and licorice.
Palate
The attack is broad and round. Cherry unfolds with elegance, accompanied by toasty notes and fine tannins. The finish lingers with great persistence.
Food and Wine Pairings
This Volnay 1er Cru pairs perfectly with a veal cutlet in cream and morels, game or matured cheeses.
Serving and Cellaring
This wine is ideally served at a temperature between 15 and 17°C, and can be cellared and will evolve until around 2036.

The Estate
Created in 1797 by Jean Latour in Aloxe-Corton, the Burgundian House Louis Latour finds its origins in 1731 when this family of coopers acquired its first plots in Côte de Beaune. Family-owned and managed by the Latour family for over two centuries, it now cultivates the largest estate of Grands Crus in Côte d'Or in Bourgogne, encompassing 50 hectares including exceptional parcels such as Corton Grèves and Corton-Charlemagne.
The Vineyard
The climat "En Chevret" is located below the departmental road, just beneath the "Caillerets" parcel, on the border with Meursault. This terroir of Volnay benefits from a specific exposure and clay-limestone soils that confer great elegance to the wine vintage after vintage. The vines, averaging 25 years old, produce a controlled yield of 35 hl/ha.
Winemaking and Ageing
Hand harvesting is followed by traditional vinification in open vats with complete malolactic fermentation. Ageing takes place over 10 to 12 months in French oak barrels from the Louis Latour cooperage, with 35% new wood at medium toast.
