The producer
Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained independent, retaining for 7 generations of know-how and the ambition to produce the highest-quality cuvées.
The vineyard
The Billecart-Salmon vineyard stretches from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way in order to produce expressive fruit that reflects the quality of its terroir of origin in Champagne.
The wine
“Rendez-vous” is an innovation launched in 2020 by the house, with the initial theme being Pinot Meunier.
This “Les Rendez-Vous de Billecart-Salmon N ° 2 Pinot Noir Extra Brut” cuvée is a gourmet and refined invitation to (re-) discover two historic terroirs of the Montagne de Reims, Ambonnay and Verzenay. Enjoying an ideal southern exposure, these vineyards planted in deep chalky soils have given birth to a champagne that expresses pure fruit with a rare aromatic balance.
The vinification and ageing
Vinification in vats. Use of 22% of 2012 reserve wines. Ageing on lees for 65 months. Dosage of 2 g / l.
The blend
100% Pinot Noir, base year 2014.
The tasting
Colour
The colour is a beautiful, bright golden yellow, adorned with vivid reflections. The effervescence is of great finesse.
Nose
The nose combines with refinement floral (cherry blossom, violet) and gourmet (biscuit, honey, raw butter) fragrances with notes of very ripe fruit and citrus zest.
Palate
The full and tasty palate seduces with its intense notes of candied lemon paste, tangerine and liquorice. Over the course of the tasting, the terroir of origin is expressed through chalky and slightly peppery touches until the finish, which blends a refreshing minerality with nice tangy notes of raspberries.
The service
For optimal tasting, serve between 10 and 12 ° C.
Food and wine pairings
This cuvée "Les Rendez-Vous de Billecart-Salmon N ° 2 Pinot Noir Extra Brut" will pair nicely with gambero rosso (prawn) ceviche or crab with a marine foam.
