Robert Parker

Pierre Rovani

The creamy scents of the non-vintage Blanc de Blancs (disgorged June 2004) lead to a high-toned personality with white pepper, lemon, lime, and salty flavors. A fresh, bright sparkler, it will be particularly successful if paired with food. Drink it over the next 4-5 years. The Bruno Paillard Champagne house deserves accolades for clearly marking its wines with their disgorgement dates. This policy allows consumers to know that the Champagne they are purchasing is not from old stock and permits journals such as The Wine Advocate to distinguish the non-vintage bottling tasted from those of the past or future. Ever since I witnessed a Washington, DC wholesaler providing retailers with “shelf-talkers” for a non-vintage Champagne that proclaimed “Parker 90-Points!” by using a 10 year old review, I have instituted the policy of indicating lot numbers or disgorgement dates for all non-vintage wines. Importer: Vintus, Pleasantville, NY; tel. (914) 769-3000

Wine Enthusiast

Roger Voss

Produced exclusively from Grand Cru fruit grown on the Côte des Blancs, this is a crisp, textured Champagne. Rich in white fruits and structured with minerality, the wine has good potential for further aging, although it is deliciously refreshing now.

Dried jasmine, white peach, lemon curd, chalk and pie crust on the nose. Medium-bodied with sharp acidity, fine bubbles and a fresh, zesty and peachy palate. Excellent balance. Drink now.

The NV Blanc de Blancs Grand Cru Extra Brut is soft, open-knit and delicious, all qualities that make it an excellent choice for drinking now and over the next few years. Lemon peel, tangerine, exotic flowers, sweet oak and mint are all nicely pushed forward in this racy, inviting Blanc de Blancs from Bruno Paillard. Disgorged July 2014.

Sourced predominantly from the Grand Crus of Oger and Mesnil-sur-Oger, the NV Champagne Grand Cru Blanc De Blancs Extra Brut pours a medium yellow color and is expressive on opening, with notes of lemon bars, honey, pear, and fresh flowers. Medium-bodied and approachable, its pillowy mousse fills out the palate, with a fresh feel throughout and a clean and silky finish. It’s drinking wonderfully now and will drink well over the coming 8-10 years. Disgorged in July 2022.

Bettane+Desseauve

A silvery transparency for these chardonnays from the exclusive Grands Cru origins of the Côte des Blancs. Here we’re in demi-mousse, with a gentler pressure that delicately lifts lemony essences and the whiteness of fine chalk. Hints of white flowers are subtle, and the aromas of the bread oven and brioche are wonderfully enveloping. The mid-palate shows a slight liqueur-like warmth of white pome fruits. On the palate, the sensation is finely dusted with rock, and a feeling of purity prevails. Lengthened beautifully by zest and saline chalk, the wine’s verticality is pure energy.

La RVF

The nose shows fine complexity, fresh with a subtle buttery touch; it is still a little constrained by reduction. The whole is underlined by a chalky note.

Description

The finesse and elegance of a fresh, mineral Blanc de Blancs Champagne

The estate

Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne houses. With an uncompromising selection of terroirs, exclusive use of first press juices, blending from a vast collection of reserve wines, and aging periods twice as long as required by the appellation’s specifications, the Bruno Paillard range reflects a constant pursuit of excellence and the desire to create a “very personal style.”

The vineyard

The Bruno Paillard House carefully maintains an exceptional vineyard, patiently built up and now spanning 32 hectares across 15 crus, 12 of which are classified as “Grands Crus.” The vineyard brings together the outstanding terroirs of Oger, Le Mesnil sur Oger, Cumières, Verzenay, as well as the exceptional Cru des Riceys located in the south of Champagne.

The wine

Once nicknamed the “lace of Champagne,” Bruno Paillard’s Blanc de Blancs Grand Cru reveals the quintessence of Chardonnay from the renowned “Côte des Blancs.” With very low dosage (5g/l), it preserves all the purity of the grape variety. As with all Bruno Paillard champagnes, the disgorgement date is shown on the back label. The wine is rested in the cellar for a minimum of 6 months after disgorgement.

Winemaking

The Blanc de Blancs Grand Cru Bruno Paillard undergoes a special winemaking process, once used in Champagne. At the time of bottling prior to the second fermentation, the addition of sugar and yeast is lower than usual. This results in a gentler effervescence, with an average pressure of 4.5 kg compared to 5 to 6 for a standard Champagne. This winemaking choice preserves all the finesse and elegance of the Chardonnay.

Blend

This Blanc de Blancs Grand Cru is made exclusively from Chardonnay sourced from the Grands Crus of the Côte des Blancs.

Characteristics and tasting tips for Bruno Paillard’s Blanc de Blancs Grand Cru

Tasting

Appearance
A very pale, brilliant color with green highlights. Exceptionally fine, the bead of bubbles is less pronounced than in other cuvées from the house due to lower pressure.

Nose
Perfectly expressing the character of Chardonnay from the finest terroirs, the aromatic bouquet opens with citrus notes reminiscent of lime and grapefruit. These are followed by nuances of white flowers, almonds, and toasted bread.

Palate
On the palate, the lively attack showcases all the complexity of the Champagne. Flavors of citrus and white-fleshed fruit shape the mouthfeel. Combining roundness, freshness, and finesse, the development on the palate highlights all the minerality of the Côte des Blancs terroir, leaving a chalky sensation that stretches into a long, fresh finish.

Food and wine pairings

This Blanc de Blancs Grand Cru Bruno Paillard can be enjoyed as an aperitif. It will also pair well with fish dishes or a meal with balanced, subtly flavored courses.

Serving

To best appreciate this Champagne of great finesse, it is recommended to serve it well-chilled in an ice bucket.
