Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne Houses. With an uncompromisable selection of terroirs, the exclusive use of first presses, blends made from a vast collection of reserve wines and an ageing time that is twice as long as required by appellation specifications, the Bruno Paillard champagne range reflects this constant quest for excellence and this desire to produce a "very personal style". The Bruno Paillard Champagne House overlooks an exceptional and patiently built vineyard, spread over 32 hectares of vines and 15 growths, 12 of which are classified as "Grand Crus". The vineyard brings together the great terroirs of Oger, Le Mesnil sur Oger, Cumières and Verzenay as well as the exceptional Cru des Riceys, situated at the south of Champagne.
Bruno Paillard’s Cuvée 72 is made from a secret blend of more than 30 wines located on the greatest terroirs of Champagne, half of which come from the house’s vines. The cuvée’s production is carried out through a solera of reserve wines, a new harvest as well as a selection of first presses, part of which (20%) had their first fermentation in barrels.
Winemaking and ageing
The name of this Cuvée 72 references the 36 months of ageing on lees, followed by an additional ageing time of 36 months after disgorgement. The dosage is less than 6g/litre.
The wine is a bright and beautiful straw gold colour adorned with yellow hues. The effervescence holds a great finesse.
Ample and complex, the nose gradually mixes fragrances of citrus and white flowers (orange blossom, hawthorn, light acacia…) As this wine evolves over time, the nose increases in complexity through notes of spices, saffron and cedarwood.
The lively and mouth-coating attack precedes a palate which aromatic character echoes the nose’s fragrances. Aromas of redcurrant jelly and black fruits also mingle with notes of honey and dried fruits. The beautiful, creamy texture persists up to a pure, ample and lingering finish.
