Marks and reviews
Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne Houses. With an uncompromisable selection of terroirs, the exclusive use of first presses, blends made from a vast collection of reserve wines and an ageing time that is twice as long as required by appellation specifications, the Bruno Paillard champagne range reflects this constant quest for excellence and this desire to produce a "very personal style".
The Bruno Paillard Champagne House overlooks an exceptional and patiently built vineyard, spread over 32 hectares of vines and 15 growths, 12 of which are classified as "Grand Crus". The vineyard brings together the great terroirs of Oger, Le Mesnil sur Oger, Cumières and Verzenay as well as the exceptional Cru des Riceys, situated at the south of Champagne.
An emblematic cuvée of the Bruno Paillard house, "Brut Première Cuvée" is produced whatever the type of vintage, "in good years as well as in poor years". With a very low dosage (6g/l), this Brut is characterised by its purity and authenticity. Bruno Paillard's Brut Première Cuvée is made exclusively from the purest juice from the first press. The blend is made from a range of 32 crus vinified separately in stainless steel vats and in barrels with a minimum proportion of 25% reserve wines, which can go up to 48%.
The wine is aged in bottles on its lees for a minimum of 3 years, followed by a rest in the cellar for 3 to 4 months after disgorgement. The date of disgorgement is indicated on the back label.
Pinot Noir (45%), Chardonnay (33%), Pinot Meunier (22%).
This Brut Première Cuvée by Bruno Paillard showcases a brilliant straw gold colour, highlighting the liveliness and finesse of the effervescence.
The complex aromatic bouquet highlights the typicality of each grape variety used in the blend. Notes of citrus and fruit emerge first, resonating with the Chardonnay varietal, before giving way to notes of red fruit such as redcurrant, raspberry and morello cherry, indicating the strong presence of Pinot Noir. Lastly, the Pinot Meunier stands out with its sweet and exotic notes. Over time, this champagne will develop floral and spicy notes as well as empyreumatic notes.
From the outset, the wine is exciting with its liveliness and minerality reminiscent of the chalky identity of its terroir. The flavoursome palate is kept in motion by citrus notes, notes evoking the sweetness of almonds, then giving way to notes of red and black fruits. The finish is clean and lingers for a long time.
Food and wine pairing
This Brut champagne by Bruno Paillard can be served as an aperitif and can also accompany a meal thanks to its vinous structure.
To fully enjoy all the purity of this Brut champagne, it is recommended to serve it at a temperature of 9° in a tulip-shaped glass in order to let it express its aromas.
