Tasting
Colour
The wine displays a deep colour, with dark ruby hues shading towards garnet.
Nose
The nose opens with intense aromas of black fruit such as blackberry and blackcurrant, accompanied by touches of ripe red fruit. It then reveals a lovely floral dimension reminiscent of violet, along with subtle notes of aromatic herbs such as rosemary.
Palate
On the palate, the wine offers a very firm texture with dense tannins. Its structure rests on refreshing acidity and a pronounced saline minerality. The finish is long, extending the flavours of black fruit and flowers.
Food and wine pairing
This red wine pairs beautifully with full-flavoured meats such as a cut of dry-aged beef, or game such as venison or hare. It is also an excellent match for roast poultry, mushroom dishes and herb-crusted lamb, as well as hard cooked-curd cheeses such as an aged Comté or a Beaufort.
Serving and cellaring
With a structure built to last, the Latricières-Chambertin Grand Cru 2023 will develop gracefully in the cellar for around 20 to 30 years, with its peak expected between 10 and 20 years after the harvest.

The estate
Officially founded in 1919, Domaine Trapet now covers 18.5 hectares, mainly located in the heart of Burgundy, France. Currently run by Jean-Louis Trapet, his wife Andrée and their sons Pierre and Louis, the family estate stands out for its pioneering commitment to biodynamics, certified since 1997. Drawing on a unique cross-regional vision that brings together Burgundian and Alsatian terroirs, the domaine crafts wines of great purity that faithfully convey the richness of their limestone origins.
The vineyard
The Latricières-Chambertin terroir consists of a single 0.75-hectare plot, located at the southern end of the Gevrey grands crus. The vines, the oldest of which were planted in 1938, thrive on a very free-draining clay-limestone soil, strewn with pebbles and enriched with silica. The vineyard benefits from a microclimate cooled by winds blowing down from the Combe Grisard. The entire vineyard is farmed biodynamically, without any herbicides, using advanced agronomic practices such as no hedging and training on individual stakes (échalas).
The vintage
The year provided conditions that allowed the grapes to reach fine ripeness, encouraging a generous fruit expression while preserving the freshness characteristic of the terroir.
Winemaking and ageing
For the Latricières-Chambertin Grand Cru 2023, the grapes are harvested by hand and rigorously sorted. The winemaking includes a significant proportion of whole bunches, accounting for around 50 to 60% of the fruit. Fermentations are carried out with indigenous yeasts. The wine is then aged in oak barrels, around 40% of them new, for an estimated 18 months.
