Tasting

Color
Bright, the color enchants with silvery highlights.

Nose

 
The bouquet is characterized by a dominant minerality reminiscent of sea iodine and oyster shell. Toasted and malty notes are accompanied by aromas of heather and anise. The floral palette unveils touches of verbena and jasmine, while the fruits express themselves through candied citrus, apricot and peach.

Palate
On the palate, this champagne reveals its character through a firm and precise structure, punctuated by sparkling bitters. The precision on the palate blends with a beautiful aromatic richness, combined with a touch of rare delicacy.

Food and Wine Pairings
This exceptional champagne pairs perfectly with refined dishes such as noble seafood, delicately prepared fish, or prestigious poultry served with creamy mushroom sauces.

Serving and Ageing 
It is recommended to serve the Dom Pérignon Plénitude 2 2005 at a temperature between 8 and 10 °C to fully reveal its aromatic complexity.

The Property

The champagne Dom Pérignon takes its name from the famous monk and procurator of the Abbey of Hautvillers in 1668, Pierre Pérignon, known as Dom Pérignon. According to legend, Pierre Pérignon discovered what is now called the Champagne method. As a fun fact, he taught this method in 1669 to the Benedictine Thierry Ruinart, thus enabling Ruinart to become historically the first Champagne House in 1729. Since 1 January 2019, Vincent Chaperon has succeeded Richard Geoffroy as Cellar Master of Dom Pérignon.

The Wine

The essence of Dom Pérignon lies in time.” It was thanks to the former Cellar Master of this Champagne House, Richard Geoffroy, who embodied the soul of Dom Pérignon for 28 years, that the concept of “Plénitude” was born. Because the expression of a vintage is not fixed in time and evolves in stages, P2 or Second Plénitude offers a new vision of the champagne after more than 15 years of development. For each vintage, a limited number of bottles is reserved, destined for longer maturation: Plénitude 2.

The Vintage 
The year 2005 was characterized by contrasting climatic conditions, with a hot and dry period tempered by welcome rains in September. These precipitations favored the development of botrytis, requiring a meticulous selection of grapes. Despite a limited production volume, this year produced grapes of exceptional quality, marked by remarkable concentration.

Winemaking and Ageing 
After disgorgement, this champagne benefited from eighteen months of rest to fully express its personality and reveal this characteristic Second Plénitude.
