The producer
Dom Pérignon champagne owes its name to Pierre Pérignon, the famous monk and cellar master of Abbey de Hautvillers in 1668, who was also known as Dom Pérignon. Legend says that Pierre Pérignon discovered what is known today as the Champagne method. As a point of interest, he taught this method to Benedictine monk, Thierry Ruinart, in 1669, which allowed Ruinart to become the first Champagne house in 1729. Since 1st January 2019, Vincent Chaperon has succeeded Richard Geoffroy as Dom Pérignon’s Cellar Master.
The wine
Following the release of the P1 in 2008, the iconic Dom Pérignon Champagne House is revealing the second phase of its 2000 Vintage: its Second Plénitude.
As the expression of a vintage is constantly shifting and evolving over time, Plénitude P2 by Dom Pérignon exposes the second life of a wine. The fruit of 16 years of production, Plénitude P2 2000 by Dom Pérignon reveals a unique Champagne, now entering the second cycle of its life, with a brand new energy that further enhances the depth of its personality, in a way that is both obvious and elusive.
The vintage
While the 2000 vintage, captured in this new Dom Pérignon 2000 P2, will be remembered for significant thermal variations throughout the growing season, it was also characterised by pleasant days in August, which allowed for the harvest to be carried out under optimal conditions.

Nose
After having taken the time to mature and evolve over the years, Plénitude P2 2000 by Dom Pérignon discovers a seductive bouquet with a remarkably generous and lively expression. Notes of stone fruit and acidic aromas of Bergamot are followed by the warm scents of summer harvest and brioche notes. More mineral than ever, the finesse of smoky notes completes the aromatic discovery of this Plénitude P2 2000.
Palate
Bursting with energy, the palate comes as a prelude. The champagne boasts a rare richness and complexity and delivers itself with great reserve. Precise, full, textured by a structure with an almost tactile feel, Dom Pérignon's Plénitude P2 2000 unfolds into a long, sappy finish punctuated by a delicious bitterness, with notes of liquorice and toasted malt. A fine Dom Pérignon Vintage and a brilliant Second Plénitude that exhibits a coherence and an extraordinary dimension.
