Appearance
Pale gold color, with a slow and steady effervescence forming a light cordon of mousse on the surface. The overall impression is one of delicacy and serenity.
Nose
Initially fairly discreet with notes of foliage and vetiver, the nose gradually evolves towards more floral and lactic aromas. Hints of white fruits, fresh thyme, and fresh hazelnut emerge with aeration. The aromatic expression, spring-like and restrained, suggests excellent potential.
Palate
The attack is delicate, followed by a creamy and tender texture that pleasantly coats the palate. The effervescence is delightfully pleasing, accompanied by high-quality acidity that gently stimulates salivation. The consistency is remarkable, both slender and airy, offering a silky mouthfeel. The finish is soft and mouthwatering, concluding on a refreshing minty bitterness with beautiful persistence.

Founded in 1764, Champagne Cossy is a family estate located in Jouy-les-Reims, a Premier Cru village in the Montagne de Reims. Sophie Cossy, who has been at the helm since 2009, continues the family legacy while bringing bold modernity. The vineyard extends across several villages, offering a diversity of terroirs. The grape varieties used include pinot noir, chardonnay, and pinot meunier. The house stands out for its commitment to sustainability and its feminine approach, blending tradition and innovation to create unique cuvées.
The Vineyard
Pinot Noir de Pargny comes from specific plots located on the Premier Cru terroir of Pargny-les-Reims in the Montagne de Reims. The three plots—Les Viraux, Les Montilleux, and Les Beaux-Regards—benefit from an exceptional Champagne terroir that imparts the wine with its characteristic minerality and aromatic finesse.
The Vintage
The year 2020 in Champagne was marked by a mild winter followed by an early spring. The hot, dry summer promoted optimal ripening of the grapes while preserving excellent acidity thanks to cool nights. These conditions resulted in grapes of exceptional quality, combining aromatic concentration and freshness.
Winemaking and Aging
Fermentation and aging were carried out in 600-liter demi-muids, allowing for a slow and subtle exchange with oxygen. This method gives the wine its silky texture and aromatic complexity while preserving the purity of the fruit and the expression of the terroir.
