A delicate and generous Brut Blanc de Blancs Champagne

The estate

Located in the heart of Aÿ, one of the 17 Champagne villages classified as Grand Cru, the Champagne Lallier House has been writing its story since it was founded by René Lallier in 1906. In a constant quest for excellence, René-James Lallier, the founder’s grandson, ushered in a new chapter in the house’s history by carrying out major modernization of the winemaking facilities as early as 1996. In 2004, Francis Tribaut, a passionate native of Champagne who also advises other leading Champagne names, acquired Maison Lallier.

The cuvées of Maison Lallier are renowned for their finesse and authentic expression of the richness of Champagne’s finest terroirs.

The wine

The Blanc de Blancs Grand Cru from Lallier is made from Chardonnay, with 60% sourced from Aÿ, a Pinot Noir terroir, and 40% from the Côte des Blancs (Avize, Cramant, Oger).

Vinification and aging

Composed of 30% reserve wines, this cuvée is vinified using the House’s own yeasts. The wine is aged for 36 to 48 months in the cellar. Disgorgement takes place about four months before release. The dosage for this Brut Champagne is 8 g/liter.

Tasting

Appearance
A beautiful pale yellow hue, highlighted by emerald reflections.

Nose
Elegant, the nose delicately combines floral notes (hawthorn, acacia, vine flowers) and pastry aromas (hazelnut, praline).

Palate
Pure and fresh, the palate charms with its delicate power and a lively finish marked by persistent citrus notes (lemon, yuzu).

Food and wine pairings

Ideal as an aperitif with foie gras toast or chilled caviar, this champagne also pairs perfectly with a seafood platter, langoustine carpaccio, poached turbot, or even sushi. Roast white meats, goat or sheep’s cheese, as well as desserts featuring caramelized white fruits and cooked citrus, are also delicious matches.
