Tasting
Appearance
A very pale and delicate rosé hue, typical of the traditional style, enhanced by subtle brass-like reflections.
Nose
Indulgent and open, the aromatic bouquet reveals sun-kissed notes of stone fruits such as apricot and nectarine. It is further enriched with fresh scents of melon, mandarin and small red berries.
Palate
The attack is straight and thirst-quenching, offering a beautiful tension that balances an intensely fruity profile. The long, savoury finish stands out for a very slight noble bitterness that prolongs the sensation of freshness.
Food and wine pairings
This cuvée pairs wonderfully with seafood, such as shellfish, fish tartare or a seafood risotto. It also goes very well with oily fish such as salmon, as well as white meats or roasted poultry served with mild spices or fruity garnishes.
Serving and cellaring
To fully enjoy the aromatic profile of Œil de Perdrix 2023, it is advisable to serve it at a temperature between 10 and 12°C. With its lovely structure, this wine has an ageing potential allowing it to be cellared for approximately 8 to 10 years.
The unique expression of a terroir Champagne by Nathalie Falmet
The estate
Officially established in 2009, the Nathalie Falmet estate showcases the work of an exceptional winegrower-oenologist. Located in Rouvres-les-Vignes, in the Côte des Bar, this 3.4-hectare micro-estate is passionately run by Nathalie Falmet. Drawing on her scientific background in chemistry and oenology, the current owner combines great analytical precision with a deeply artisanal approach. The estate distinguishes itself by its commitment to limiting inputs and showcasing the pure expression of its Kimmeridgian terroirs through meticulous plot-by-plot vinifications.
The vineyard
The grapes come exclusively from the Val Dron plot, located on the hillsides of Rouvres-les-Vignes. This Champagne terroir is characterised by clay-limestone soils dating from the Upper Kimmeridgian, particularly favourable to the flourishing of the vine. Cultivation is carried out sustainably, and this cuvée benefits from the High Environmental Value (HVE) certification, underlining a profound respect for the local ecosystem.
Vinification and ageing
To craft Œil de Perdrix 2023, the black grapes are pressed directly to obtain a very pale colour. Fermentation takes place in temperature-controlled stainless steel vats to preserve the freshness of the primary aromas. Oenological intervention is minimal: only neutral yeasts are used, allowing the terroir to express itself freely.
