The estate

Champagne Pierre Baillette is a grower-producer house based in Trois-Puits, a premier cru village on the Montagne de Reims. It is a family estate, now run by Périne Baillette Chartogne, daughter of Pierre Baillette, who is both its owner and winemaker. She favours Pinot Noir, single-parcel cuvées, working the soil with horses and native yeasts.

The vineyard

This cuvée comes from Rilly-la-Montagne. This Champagne village, classified premier cru, lies to the west of Trois-Puits, on the Montagne de Reims. Some of the estate's parcels are worked with horses.

Vinification and ageing

Les Bulles Roses 1er Cru 2020 is a saignée rosé: its colour comes from the juice's contact with the Pinot Noir skins, rather than from a blend of white and red wine. Fermentations are carried out with native yeasts. This champagne is dosed as an Extra Brut, in keeping with the estate's very low dosages.
