Tasting
Nose
The aromatic bouquet opens with a beautiful citrus freshness, evoking lemon and grapefruit. It then evolves toward indulgent pastry notes, frangipane and toasted bread, delicately highlighted by touches of dried fruits such as hazelnut and almond, along with subtle floral nuances of linden and lemon verbena.
Palate
From the very first sip, the wine is lively and marked by an elegant salinity. The palate reveals vibrant citrus flavors, notably yuzu and lime, which blend harmoniously with aromas of brioche and toasted bread. Light hints of toasted almond and sweet spices, such as ginger and white pepper, complete this complex tasting experience.
Food and wine pairings
This cuvée pairs beautifully with umami-driven dishes or Asian cuisine such as sushi or tataki. It will also enhance seafood, such as baked white fish or ceviche, as well as white meats in sauce. Finally, vegetarian pairings featuring grilled vegetables or fresh cheese will make excellent choices.
Serving and cellaring
To fully appreciate Extra Brut Extra Old 5, it is recommended to serve it at a temperature between 8 and 10 °C, ideally in Prestige-style glasses. With exceptional aging potential, this wine can be cellared for over 15 years.

The estate
Founded in 1772 in Reims by Philippe Clicquot, the Maison Veuve Clicquot Ponsardin is an iconic figure in Champagne. Its history was profoundly shaped by Barbe-Nicole Clicquot Ponsardin, a pioneer of numerous innovations. Now owned by the LVMH group, with Thomas Mulliez at its helm, the estate relies on a vast 390-hectare vineyard. Guided by its historic motto advocating unique and optimal quality, the house perpetuates exceptional expertise, embodied by its Cellar Master Didier Mariotti.
The vineyard
Covering 390 hectares, the estate’s vineyard is located in the heart of Champagne. Strongly committed to an environmental approach, the property has completely eliminated the use of herbicides since 2018. It practices regenerative viticulture, incorporating winter cover crops and working with animals for natural soil maintenance and vitality, thus ensuring the authentic expression of the terroir.
The blend
This non-vintage champagne is made exclusively from a meticulous selection of reserve wines from several years (1996, 2008, 2010, 2012, 2013, 2014 and 2015), drawn from the house’s extensive collection.
Winemaking and aging
The production of Extra Brut Extra Old 5 stands out for a particularly meticulous double-aging process. First, the reserve wines undergo aging in tanks on fine lees. Then, after bottling, the wine continues its maturation on the lees in the estate’s cellars for a minimum of three years.
