The Quintessence of Champagne Grand Cru Terroir by Bruno Paillard
The estate
Founded in 1981 in Reims, the House of Bruno Paillard stands out in Champagne for its rigour and independence. Descended from a long family line of brokers and winegrowers, the estate is distinguished by a rigorous plot-by-plot approach and a constant quest for purity. Today, Alice Paillard, managing director and co-owner, leads the estate while perpetuating this singular vision. The House's signature lies in extended aging and very low dosages, resulting in wines of remarkable precision.
The vineyard
The House's vineyard spans 25 hectares across 89 plots and 19 crus within Champagne. The vines, with an average age of 32 years, thrive mainly on chalky soils. The estate practises sustainable viticulture, excluding the use of herbicides and pesticides, while promoting soil health, microbiological life and biodiversity. For the "Nec Plus Ultra" series, the grapes come exclusively from terroirs classified as Grand Cru.
Winemaking and aging
The range's technical philosophy is applied to the N.P.U. "Nec Plus Ultra" Rosé 2004, a cuvée crafted only in years deemed exceptional. The House uses exclusively first-press juice. Vinification is carried out plot by plot, with malolactic fermentation used to balance the wines' natural tension. Aging on lees is particularly extended, lasting between eight and ten years. Finally, the dosage is kept very low, at around 3 g/L, thus preserving the wine's original purity.
Grape varieties
This N.P.U. "Nec Plus Ultra" Rosé 2004 from Bruno Paillard is crafted from a blend of Pinot Noir and Chardonnay.
