The producer
Since its creation by Elisabeth Salmon and Nicolas-François Billecart in 1818, the Billecart-Salmon Champagne House has remained independently-owned and thus has preserved both its know-how and its high-quality vintages for 7 generations.
The vineyard
The Billecart-Salmon vineyard spreads across nearly 100 hectares, from the Côte des Blancs to the Montagne de Reims. The vines are cultivated and cared for in a traditional manner in order to reach an authentic fruity expression and reflect the quality of the Champagne terroir.
The wine
The innovative "Rendez-vous" were first released by the House in 2020, with the aim of showcasing the Pinot Meunier varietal.
"Les Rendez-Vous de Billecart-Salmon N°3 Pinot Meunier Extra Brut" is a champagne made from historic vineyards in the Marne Valley (Leuvrigny, Damery, Venteuil).
Vinification and ageing
Vinification in stainless steel vats. Use of 30% reserve wines from 2013. Maturation on lees for 64 months. Dosage of 2 g/l.
The blend
Pinot Meunier (100%), base year 2015.
The tasting
Colour
The colour reveals a beautiful golden hue, with bright reflections. The effervescence is utterly fine.
Nose
The expressive and delicate nose exudes floral (lime blossom, grasses) crunchy fruit and citrus pulp fragrances along with savoury notes of cereal grains and thatch.
Palate
A delicious and smooth feel, the palate reveals intense fruity notes (white cherry, pineapple, yellow plums). The palate extends its refined aromatic framework to an aromatic finish that blends notes of white pepper and yellow fruit.
Service
For an optimal tasting, serve between 10 and 12°C.
Food and wine pairing
A veal pie with foie gras or a pâté en croûte Bressan will pair beautifully with this "Les Rendez-Vous de Billecart-Salmon N°3 Pinot Meunier Extra Brut" champagne.
